A career hotelier: I enrolled at Bolton Catering College aged 16 to chase my dream and follow in the chefs whites of my local heros Paul Heathcote and Nigel Howarth. Despite learning and loving my trade both at college and whilst working at weekends and evenings in the kitchen and front of house at a local restaurant, I was drawn to a broader career in Hotel Management and went on to study Hospitality Management at Blackpool & The Fylde College. Almost 25 years on, I have been really lucky to only work for brands and businesses that I personally admired and I hope that I have added to each of them along my journey.
